Peanut Butter Chicken with Coconut Rice

Another recipe from Work It, Mom

My family has had this several times in the last month and we love it!

A funny aside: We get our peanut butter from the bulk section at Winco where you can grind the peanuts yourself. The last time we did this I lifted up my five year old so he could push the "on" switch. Apparently he had never seen inside the top of the peanut grinder because he exclaimed, "Whoa! I didn't know there were peanuts in peanut butter!" So I asked, "What did you think peanut butter was made from?" He replied, "I don't know. I thought it was just butter for kids and that 'peanut' was just a nickname."


Ingredients:

1/2 cup natural peanut butter
1/2 cup water
2T soy sauce
1T brown sugar (do not use if your peanut butter is already sweetened)
2T vegetable oil
3 cloves garlic, minced (or 1.5 tablespoons of the minced garlic you get in a jar)
1/2 tsp crushed red pepper (or more if you like things spicy)
4 cups broccoli
4 chicken breasts

For the rice:
1 can coconut milk
1 cup water
1.5 cups jasmine rice

Directions:

Mix peanut butter, water, soy sauce, brown sugar, vegetable oil, garlic, and red pepper into a mixing bowl. Stir vigorously for several minutes until mixture is smooth.

Cover this and set aside.

Start the coconut rice. Bring the coconut milk and water to a boil then add the rice. Bring back to a boil then reduce heat, cover, and let it cook for about 15 minutes. (To make coconut rice with other kinds of rice the basic rule is to replace half the water with coconut milk and cook as usual)

While the rice is cooking cut the crowns off of the broccoli and cut the chicken breasts into strips. Using a small amount of olive oil in a skillet, slightly brown the outside of the chicken breasts then remove from heat.

Dump the broccoli on top of the chicken and add 1/4 to 1/2 cup of water. Return the skillet to low heat and cover. Let the chicken and broccoli steam until all the water is gone.

Pour the peanut butter mixture over the chicken and broccoli and gently stir to coat. Serve with the coconut rice which should finish cooking at the same time.
