Just leave the zucchini and run!

It's that time of year again: lock your car doors in the church parking lot, 'cause your gardner friend is trying to get rid of a surplus of zucchini. Of course they still may leave it in a dreaded "drive by" where you return home to find of paper sack full of the stuff with a note, "Just thought you might need some zucchini, Your friend....". Is this kind of gift really part of friendship? The darn plants are just too prolific for their own good. Even still, I grow a plant every year. It keeps me in supply of zucchini, plus extra to give away; I am just that kind of a friend.
Here is a recipe that Emma and I really enjoy for Zucchini Pancakes. It sounds weird, but they are quite tasty. Usually Jeff isn't home when I make them, so he misses out. His comment after tasting one for the first time, "They aren't bad, but how often are you going to make them?" Seriously, Emma and I have these for dinner at least 4 times a week. Protein, vegetable, and carbs in one pancake, what's not to love?

Zucc Pies (Zucchini pancakes)

2 cups grated zucchini
½ cup cheese
1 cup Bisquick
2 eggs (slightly beaten)
Mix all ingredients with enough milk to make pancake consistency batter (about ¼ cup). Cook at a lower temp and longer time than regular pancakes to let the zucc cook.

Wow...I had to look to make sure you didn't live in MY town..that is exactly how it is with zuchinni. My brother in law said they went to town (Provo..an hour and 1/2 north) and came home to find 3 different bags of zuchinni with notes on the front porch. I had to laugh since I almost took him some too!!

I live in a sorry state (ya I mean it both ways)I know no one to give me zuchini, the time I tried to plant it between the poor soil and the bunnies I didn't get anything! Imagine summer with no Zucchini! Its very sad!!
