Chicken & Rice with Black Bean Salsa

I found this recipe online. It comes from Chris Jordon who writes a few blogs I follow. It is quick easy and delicious. And better yet, only 5 ingredients!

1 jar (16 oz) of your favorite salsa
Chicken Breasts (I used 2 very large) fillet in half and into cutlets, or use chicken tenders
1-2 cans black beans, depending on the size of your family (I just used 1)
Shredded chedder or mexican blend cheese, about 1 cup
Cooked brown rice

Pour the salsa in the bottom of a baking dish. Lay chicken cutlets on top. Cook at 350 for 25 minutes. Add black beans over the top (rinsed and drained) and bake about 10 minutes longer. Sprinkle cheese on top and bake about 2 minutes. Serve over cooked brown rice.

~An alternative would be to use one can black beans and one can drained corn.

Will LOVED this and after some coaxing Wyatt and Anna tried it and liked it, too. Hope your family will enjoy it!

This dish is fantastic. ***** 5 stars from our family! I used the leftovers in burritos for a second meal. Very, very delicious and sinfully easy.
