Oven Baked Fajitas

It's winter and cold and not the time to break out the grill. SO, let's bake some fajitas in the oven!

Oven Baked Fajitas
Serves 4

2 Tbs. Vegetable Oil
2 tsp each: chili powder, ground cumin
1 tsp. salt
1 lb. uncooked steak or chicken, cut into thin strips
1 14oz. can diced tomatoes with mild green chilies
1 medium each: green bell pepper, red bell pepper and onion, cut into thin strips
10 flour tortillas, fajita size

Preheat oben to 400.
Combine oil, chili powder, cumin and salt in a 9x13 in. baking dish.
Add meat, tomatoes, peppers and onion. Mix well.
Bake uncovered, 25 minutes.
Serve wrapped in warm tortillas with a little sour cream and shredded cheddar cheese!

These are great, try addding cut up chunks of yellow squash and its really good.
