1 Tbs. baking powder
1/2 tsp. salt
2 Tbs. sugar for sweet muffins, 1 tsp. sugar for savory
1 egg slightly beaten
1 cup milk
1/4 cup melted butter
Preheat oven to 375. Grease 12 muffin cups. Mix dry ingredients and then add wet ingredients until just combined. Batter will not be smooth. Spoon into muffin cups and bake for 17-22 minutes.
Sweet additions: 1/2 cup dried fruit.
Savory additions: crumbled bacon or finely chopped ham and 1/3 cup cubed cheese. I also added a few additional spices like a touch of garlic powder, thyme, and 1/8 tsp. pepper. Perfect served along side soup.
I've baked this recipe both savory and sweet now, both time with whole wheat flour/white flour combo. The muffins are fluffy, healthy, and have a nutty-buttery taste. This is a super easy and fast snack.

I made the savory version of these the other night to go with soup, with crumbled bacon and cheddar cheese added to the batter,and they were a hit! Funny story, though:
As I was mixing them up I was talking like mad to my husband. I had them all set to go and started scooping the batter into my 6 muffin tray. After I had filled them all I realized it was going to make more than 6 muffins so I scooped the batter back out and into my 12-tray muffin. I put them in th oven and set the timer. About two minutes passes and I heard the microwave beep at me, meaning something I had put in there was done and I hadn't opened the door yet. Darn it! I had forgotten to add the butter (the batter did seem kind of stiff). SO I had to make the decision of just letting them go without the butter or trying to scoop out the batter, add the butter and then re scoop then into the muffin tray. I decided on the latter, cause, I figured eveything's better with butter. So, after adding the butter and refilling the cups I finished baking them.
All that to say they still turned out good, and I imagine they would be even better without my goof.
Moral of the story, you might not want to vent to your husband while preparing this batter :)
