I need some ideas of what to do with Butternut squash. Any ideas? My neighbor down the road has hundreds to get rid of. If anyone wants some, you are more than welcome.
I like it baked then add butter, salt and parmesan cheese. (don't really follow a recipe for that one.)
Or this one's good too....bake first, scoop out and mix in 1/2 c milk, 2T. flour, 1 egg, 2T. apple juice or cooking sherry, 1/2 c. brown sugar 1/2 t. salt 1/4 t. pepper 1/8 t. (or more) cinnamon
Mix it all up and bake in casserole dish for 30 minutes at 325. This recipes has 97 calories/serving.
Or make baby food and freeze for Mandy? :)

Yes, I was going to suggest the baby food too! You can freeze them in ice cube trays. I love squash, it's like a superfood, and Eli loves it.
I also would try making pie! You can make pumpkin pie out of lots of different kinds of squash.
